Sun-dried Tomato Bruschetta

* 2 tablespoon olive oil

* 1/2 cup oil-packed sun-dried tomatoes

* 2 medium organic tomatoes, chopped

* 3 oz feta cheese

* 1 tablespoon basil

* 1 tablespoon minced garlic

Salt to taste


  • Chop the sun-dried tomatoes into small pieces.

  • In a bowl, add olive oil and sun-dried tomatoes

  • Toss with the tomatoes, garlic, and feta until combined.

  • Add basil and salt to taste.

Great as a salad dressing or as a spread or dip
