Pumpkin Seed Pesto

This is the most delicious pesto and it's easy to make and store. I have a dollop of it every morning with my eggs and veggies. As an added bonus, basil is a natural anti-depressant and the Spanish Needles or Bidens are antibacterial, Anti-inflammatory, Antimicrobial, Antimalarial, a Diuretic, Hepato-protective (prevents liver damage), and Hypotensive (lowers blood pressure). Not to mention, pumpkin seeds are packed full of valuable nutrients. Eating only a small amount of them can provide you with a substantial quantity of healthy fats, magnesium, and zinc.





Ingredients:

2 C Italian Basil

.5 C Wild Foraged Leaves of Spanish Needles (Bidens)

2 C Toasted Pumpkin Seeds

2 T Sheep Feta (Easier to digest than cow dairy)

1/4-1/2 of Olive Oil

3 Cloves of Garlic

Salt and Pepper to Taste


Directions:

1. Toast raw pumpkin seeds for 4-6 minutes at 425 F

2. Destem basil and Spanish Needles (Bidens)

3. Place leaves in a Vitamix or Food Processor

4. Add pumpkin seeds, garlic and feta

5. Pour in olive oil and blend until smooth


If it seems too dry, add more oil. Refrigerated, it stays in a sealed container for a week +. Freeze and it will last for a month+.
