1 14 oz can of kidney beans, rinsed and drained
1/2 Cup Sliced Carrots(1-2 medium sized)
2-3 Garlic Cloves
1 tbsp Tahini you can add more(2-3 tbsp)
1/4 Cup Extra Virgin Olive Oil
2-3 tbsp Red Curry Chili Paste
Juice of 1 lemon(medium)
2 tbsp Fig Jam add more for more sweet taste
Salt or as per taste about 1 tsp or Better Then Bullion Sautéed Onions
To Roast Carrots and Garlic
1 tsp Olive Oil
1 tsp Cumin Powder
1/4 tsp Salt
Directions:
Roast Carrots and Garlic
Wash peel and cut carrots
Toss carrots in oil, salt and cumin powder
Roast for about 8-10 min. in Air Fryer at 400 ºF or 200 ºC. Cool before making Hummus.
Make Hummus
Add carrots, garlic, lemon juice, red curry paste, jam to a blender (I use a VitaMix)
Grind to coarse paste.
Add beans, tahini, oil, and salt (or substitute salt with 2 teaspoons of Better Then Bullion Sautéed Onions)
Grind to a smooth and creamy paste. If the mix is too thick to grind, add water a little.
Serve topped with more EVOO, freshly crushed black pepper, sunflower/pumpkin seeds or just like that. Enjoy with Pita Chips, Naan Bread or Falafels or make it into a salad dressing with a little extra oil and rice wine vinegar to thin it out.
