Chocolatey Peanut Butter Truffles

1 1/2 cups almonds or almond flour

1/2 cup shredded coconut

1/3 chia seeds

1/4 t sea salt

2/3 cup natural peanut butter or other nut butter

5 chopped up dates or 3 T of a block of pressed date

1 tsp vanilla

1 T cacao

In a blender, place almonds, coconut, chia seeds, salt, vanilla, cacao and blend until powderized.

Slowly add nut butter and chopped dates a little bit at a time at a slow speed so that it's not hard on the motor.

Once completely blended, use a tablespoon to spoon out mixture and create about 25-30 balls by rolling them in your washed, dried hands and placing them on wax paper on a plate. You may want a little coconut oil on your hands to make it easier to roll.

Freeze or refrigerate balls for at least an hour to allow them to harden. You can eat them before that but they'll be more crumbly
