Ingredients:
1 pkg. firm tofu, drained and rinsed/1 can tuna/2 C of pre-cooked chicken
1 2.25 oz can of black olives
1/4 medium minced red onion
1/4 bell pepper or 3 mini bell peppers minced
1 1medium stalk celery chopped 1/4 in.
1 medium shredded carrot
2 T of roasted sunflower seeds or pumpkin seeds
3 T mayonnaise, (I prefer Sir Kensington's with sunflower oil)
3 T Yellow mustard
2 T Balsamic vinegar
1 T fresh or dried dill
1/2 T of garlic powder
1 t of celery seed
1 t of powdered mustard
1/2-1 t paprika
salt and pepper to taste
Instructions
Mash the tofu or other protein in a bowl, leaving some texture. Add the remaining ingredients. Mix until combined. Easy-Peasy
Store in the refrigerator at least half an hour before serving. Stores for 5-7 days.
